A useful fit for

A cook who wants one 16-inch outdoor pizza, a local oven-temperature display and separate wood/charcoal or exact model-specific gas paths. The oven mass is not confirmed in the evidence set, so a lifting limit cannot be satisfied from an assumed shipping-box number.

The main tradeoff

Large fire and station footprint, 30-minute solid-fuel preheat, manual fuel tending and hand turning. The two gas burners are separate purchases with separate instructions; exact dimensions do not replace their clearances.

Your needs, this model

Does it fit your priorities?

Can I cook one 16-inch outdoor pizza with supplied wood and get a local oven reading?

Yes. The standard wood plan includes the model-specific digital thermometer; it still needs supervised fire tending and hand turning.

Can the base Karu 16 run on a household natural-gas line without another burner?

No. Karu 16 natural-gas use requires the separate exact Ooni burner and a safe fixed-line installation.

Can it cook indoors or meet a 17-inch pizza requirement?

No. The exact oven manual says outdoor use only and the manufacturer identifies a 16-inch maximum pizza.

The Ooni Karu 16 is an outdoor, manually tended oven for cooks who want a larger 16-inch pizza floor and a choice of fuels. Its standard setup burns wood or cooking charcoal; bottled propane and natural gas each require a separate, model-specific burner. A front-mounted digital thermometer gives an at-the-oven reading, but it is not a food probe, phone hub or remote flame control. The distinction matters: this is a larger live-fire station, not a hands-off electric appliance.

A bigger floor changes the serving pattern

Ooni describes the Karu 16 for pizzas up to 16 inches. The manufacturer dimension sheet measures a 16.7-by-16.7-inch cooking area, so this is a substantially broader one-pizza floor than the 12-inch Karu 2. It does not establish room for two 12-inch pies at once; the documented operating plan is one pizza, turned by hand. A 16-inch pie also needs a peel and launch technique that can handle the larger dough round. If the household mostly makes smaller pies, the extra floor is space to heat and manage rather than a guaranteed throughput increase.

The same sheet gives an external footprint of about 19.6 inches wide by 32 inches deep and 32.9 inches high with the chimney installed. Those are oven dimensions, not safe clearances. Its package-weight line says 88 pounds for the shipping box, not the oven, so I have not treated that number as a carry weight. Confirm the actual oven weight from a current manufacturer listing before making a lifting decision. The chimney, legs and installation footprint also make this a poor choice for someone who needs to tuck a hot oven into a small corner.

Wood and charcoal are the complete base cooking plans

The oven manual identifies a wood-and-charcoal burner as standard. For wood it specifies dry, untreated hardwood pieces no longer than 9 inches and 3 inches across, no more than 0.5 kg per addition and no more than 1.3 kg in the tray. It calls for the oven to preheat for 30 minutes and for fuel to be added as needed. With charcoal, use cooking charcoal and wait for an ash coating before cooking. This is a live fire to supervise and tend; the manual says never to leave the oven unattended, avoid high or gusty winds, use a stable nonflammable support and allow at least two hours to cool before moving, covering or storing it.

The supplied front-mounted digital thermometer is powered by three AAA batteries and reads the oven interior in Celsius or Fahrenheit. That is useful at a glance, but it is not a probe in the food, and there is no supplied phone hub or app-based monitoring. The display does not control fuel or flame. There is no motorized stone in the base package, so the cook turns each pizza manually. If your essential checklist says “phone reading,” “remote gas adjustment” or “automatic turning,” this model does not meet it just because it has a digital display.

Gas uses two different accessories, not one interchangeable kit

Ooni's U.S. CSA manual identifies a propane burner for the Karu 16. It replaces the solid-fuel tray and uses a 20-pound propane cylinder; the instructions require the cylinder to be at least 40 inches from the appliance. The CSA document lists 24 inches at the sides and 36 inches behind, while the main oven manual requires 3 meters at the front and above and 1 meter at the sides and rear. Because these directions do not describe one simple smaller clearance, the propane plan uses a conservative 10-foot clearance requirement in matching. Check the current instructions and local rules before selecting a site.

Natural gas is a separate option. The current Ooni U.S. Natural Gas Burner page explicitly names both Karu 16 and Karu 2 Pro, and says the burner is for natural gas only. It is a separate functional purchase and fixed-line installation; it is not a propane conversion hose. I found a dedicated Karu 16 natural-gas manual in the already archived official support material, but the gas-line arrangement and current clearances still need to be followed for the exact installation. Never combine the wood/charcoal, propane and natural-gas instructions into a single operating plan.

Which answers change the recommendation?

Choose Karu 16 when you want an outdoor 16-inch pizza, a local oven-temperature display and the option to cook with supplied wood or charcoal. Choose “earlier models” in the finder because the archived Karu 16 model is no longer the current Karu 2 Pro. If you require gas with no separate burner purchase, select a factory gas oven instead. If you need a phone reading or a food probe in the box, the later Karu 2 Pro has a different digital monitoring package; its matching natural-gas accessory is also distinct from Karu 16's. For a lighter, smaller fire oven, compare the 12-inch Karu 2 or Fyra 12, but neither meets a 16-inch pizza requirement.

One practical wrinkle is its current product identity. The archived U.S. and U.K. Karu 16 product routes now redirect to Karu 2 Pro, while the exact Karu 16 oven manual, dimensions sheet, U.S. propane safety manual and U.S. natural-gas listing still identify Karu 16. I therefore retain it as an earlier U.S.-supported model, not as a claim of current base-oven stock. Before buying, check the model label and verify that a used or remaining-stock listing is actually UU-P0E400; do not assume a newer Karu 2 Pro is the same oven or accepts every instruction interchangeably.

For the exact model, consult the Ooni Karu 16 manufacturer page, the Karu 16 oven manual, its dimensions sheet, and the exact U.S. natural-gas burner listing. This is a reasoned fit assessment from those documents, not an independent cooking or temperature test.

Key details at a glance

Fuel versionsThe supplied tray is documented for cooking charcoal or dry untreated hardwood (up to 9 in long and 3 in diameter; maximum 0.5 kg per addition and 1.3 kg in tray). Separate exact Karu 16 burners support U.S. bottled propane or natural gas; they are not interchangeable and are not included with the base oven.
Maximum pizza on standard stationary floor16 in
12-inch pizzas at once on standard floor1
Temperature hub supplied with ovenNo
Food probes supplied with oven0
Motorized stone supplied in base packageNo
Monitoring and controlsFront-mounted, battery-powered digital thermometer displays oven temperature in Celsius or Fahrenheit; it is not a food probe, phone hub, stone-surface IR reading or flame control.
Optional rotating setupNo powered turner is in the base package; rotate and retrieve each pizza by hand. Two simultaneous 12-inch pizzas are not established for the 16.7 x 16.7 inch cooking floor.
Space and measurement noteThe official Karu 16 dimension sheet shows about 19.6 in front width x 32 in depth x 32.9 in height with chimney; these are product dimensions, not safety clearances. Its 88 lb figure is the shipping box, not confirmed oven-only mass. Verify carry weight for the exact listing.
Stone careThe exact manual requires outdoor use on a stable, level, nonflammable surface, supervision throughout firing, protection from high/gusty winds and complete cool-down (at least two hours) before moving, covering or ash removal. Follow the exact fuel accessory manual.

Use the exact model’s instructions for operating limits, supplied equipment and version differences.
