A useful fit for

A buyer who wants a preassembled wood-fired oven with a larger 38 by 28 inch hearth and the maker's two-12-inch layout, and can plan the required support and installation.

The main tradeoff

The finished oven core avoids assembling a DIY kit, but it still needs a separate permanent support with at least 625 lb capacity, full clearance planning, chimney work and hand-fired tending; exact oven weight and maximum pizza diameter are unconfirmed.

Your needs, this model

Does it fit your priorities?

Does the CBO 750 countertop document two 12-inch pizzas together?

The official CBO 750 Countertop layout illustrates two 12-inch pizzas together. The manufacturer says layouts are examples rather than maximum-capacity guarantees.

Is this larger wood-fired countertop plan still limited to manual turning rather than powered rotation?

This exact wood-fired countertop model has a fixed hearth; the product package lists no rotating drive. It is a manual-turn setup rather than a powered rotation option.

Can an installation plan meet the CBO 750 manual’s largest 36-inch combustible-clearance direction?

The current CBO wood manual specifies a 36-inch front clearance from the doorway as the largest listed combustible direction. A single 36-inch filter does not cover the separate sides, back, overhead, underside, door-side or wood-storage rules.

The Chicago Brick Oven CBO 750 Countertop is the larger preassembled, wood-fired finished oven in the CBO 500/750 countertop pair. It is not the 750 DIY kit and it is not the separate 750 Hybrid Countertop: the U.S. shop record lists three finish variants for this wood-only countertop row, while the Hybrid uses a distinct gas-equipped product family and manual. The exact row reviewed here is the assembled CBO-O-CT-750 family, not a generic “750” that can silently inherit another package’s equipment.

The extra room is useful for a shared service

The hearth measures 38 by 28 inches, and the manufacturer’s dimension-based layout illustrates two 12-inch pizzas together. The same illustration labels layouts as examples, not maximum capacity. Two 12-inch pies are therefore a documented arrangement, not a promise that every dough, pan or larger pizza will fit. The opening remains 17 inches wide—the same stated width as the 500—so the larger floor does not mean a wider mouth. Make room to launch, turn and remove food, not just to place it on paper.

The 750 model drawing gives an oven body about 40 inches wide by 35.5 inches deep and specifies a supporting surface with at least 625 pounds of capacity. That number is a support requirement, not the product’s measured mass; the checked page and drawing do not establish an exact assembled oven weight. It is consequently not a match for a buyer who needs a known maximum lift weight. Compared with the 500 Countertop, the 750 uses more hearth area and needs a higher-capacity permanent support.

What arrives, and what still needs planning

The current product page describes a six-piece preassembled oven—dome, three-piece hearth, arch and decorative door—with full insulation and a Class A double-wall chimney. Its listed accessory package includes a peel, cleaning brush and handheld infrared thermometer. That thermometer can check a surface when you point it; it is not an always-on temperature display, food probe or control system. No powered rotation, gas burner, electric element, thermostat, saved program or phone operation is listed for this exact wood-fired product.

The counter or base, installation labor and any additional venting components must be planned separately. Use the exact model drawing and current wood-fired manual with a qualified installer. The manual’s combustible clearances include 10 inches at the oven’s sides and back, 18 inches overhead, 30 inches below, 30 inches at each side of the door opening and 36 inches at its front; it calls for 7 inches between underside insulation boards and wood storage. These are directional installation requirements, not interchangeable with a single “space around the oven” measurement.

The maker page describes indoor and outdoor certification, but the indoor choice remains conditional on a proper solid-fuel chimney, ventilation, local code and approval. Wood-fired operation also asks for attention the whole time: build and tend the fire, manage the hot hearth, and turn food by hand. The manual requires a gradual first cure near 212°F without exceeding it over two to three days and specifies dry solid wood. If you want gas at the turn of a knob, the Hybrid model is a separate, factory-configured choice—not an alternate fuel plan for this SKU.

How the 750 changes your match

The CBO 750 Countertop makes sense when two illustrated 12-inch pies at once are more useful than the smaller 500’s one-pie layout and when the planned support can meet the 625-pound minimum. It does not meet a request for a documented three 10-inch layout: the available manufacturer illustration does not establish that pattern, and an unverified arrangement should not satisfy an essential serving need. It also cannot meet an essential propane, natural-gas, electric, powered-turning or exact-temperature request.

Compared with the CBO 750 DIY kit, the countertop package is presented as preassembled with its insulated hood and chimney; it avoids treating the buyer as the assembler of the oven’s core. It does not remove the need to design the supporting counter, observe the clearances or arrange installation. Compared with a 750 Hybrid, it has no documented gas burners and should not inherit that model’s fuel options. Finish is primarily an appearance choice among the listed variants; cooking space and operating plan remain the wood-fired 750.

A fit for a built-in station, not a casual countertop

This is a strong candidate for a household that wants a permanent wood oven with more hearth room and is prepared to build a safe station around it. It is a poor fit for a renter, a small patio with no robust support, a buyer who needs known handling weight or someone looking for a compact appliance that can be moved after dinner. Decide the installation site and support before comparing the 500 and 750; the extra hearth helps only if your available space, fuel routine and two-pizza example match the way you actually cook.
